This is one of the most popular dishes in Italy and it has many variations, but it’s Lazio, Tuscany and the Veneto that have made it a delicacy.
It comes from a rustic heritage which saw pulses as an excellent alternative to meat. It is a typical autumnal dish and since this is when the pigs were traditionally slaughtered, the pasta and beans are usually cooked in broth flavoured with pork bones and rind.
